Made with thin slices of rich beef, mushrooms and onions served in bread with cheese melted over it, this gourmet sandwich is the pride of Philadelphia’s culinary scene, and rightly so. The locals revere this dish, but disagree on the exact cheese to use: some swear by provolone, while others prefer orange cheese. Why not try them all? This is actually the perfect recipe to use up your fondue leftovers!

Ingredients

    • 30 ml (2 tbsp.) butter
    • 1 onion, chopped
    • 227 g (8 oz.) sliced white mushrooms*
    • 1 package (350 g) Lacroix fondue beef meats
    • 5 ml (½ tsp.) steak spice
    • 150 ml (⅔ cup) beef stock
    • 15 ml (1 tbsp.) Worcestershire sauce
    • 5 ml (1 tsp.) cornstarch
    • Salt and pepper to taste
    • 4 submarine or ciabatta buns
    • 8 cheese slices (provolone, mozzarella or other)

Preparation

  • 1. Place the rack in the centre of the oven and preheat the oven to broil.
  • 2. Heat 15 ml (1 tbsp.) butter in a large frying pan over medium-high heat. Sauté the onion and mushrooms. Set aside.
  • 3. Open the buns and place them on a baking sheet. Add two slices of cheese to each bun and put them in the oven.
  • 4. Heat 15 ml (1 tbsp.) butter in the vegetable frying pan over medium-high heat. Sear the beef slices on both sides. Add the steak spice and season with salt and pepper to taste. Set aside.
  • 5. Deglaze the frying pan by adding 125 ml (½ cup) beef stock. Gently scrape the pan with a spatula to free the stuck-on morsels. Stir and reduce for around 3 minutes over high heat.
  • 6. Dissolve the cornstarch into the remaining stock. Add the Worcestershire sauce. Stir the mixture into the frying pan. Bring to a boil and simmer over medium heat for around 2 minutes or until sauce thickens.
  • 7. Put the meat and the vegetable mixture back into the frying pan. Stir. Adjust seasoning as needed.
  • 8. Remove the browned buns from the oven and top them with the meat mix.

* You can replace the mushrooms with chopped green peppers.
